The full rules for Star Wars 5E are available online, and that includes a character creation tool, which can help guide you. To start, you'll choose an species you want to play as, whether that's one of Star Wars' iconic aliens, five (count 'em, five) different types of droid, or a classic human. Your species helps give you a physical description, a few abilities and bonuses, and perhaps an idea of your character's home culture. Then, choose your class—the main source of your abilities and powers—which also determines whether you use weapons, technology, or the Force. If you're creating a first-level character, you may have a few choices to make, but you'll certainly have more if creating a higher-level character. Your class will help you prioritize ability scores in the next step; you can choose ability scores from a standard array, use a point-buy system, or roll them randomly. With class and abilities established, you can name and describe your character, choosing a background for what they did before they started adventuring. This gives you access to an extra feat, a special ability from your previous life. You'll also want to pick up some equipment for your character, perhaps weapons, armor, and traveling gear. With a few finishing touches, like choosing skill and tool proficiencies and adding some details, you're done! Unless, of course, you need to build a starship next.
